Hey friends! 

The holiday season is in full swing and we are bracing for impact!  To be honest, during this time of year it really is so hard to balance it all...
  • balance enough sleep with extra events & activities... 
  • balance fruits & veggies with sweets & holiday treats... 
  • balance gift giving with saving money... 
  • balance exercise with meaningful rest. 
It is. A. Lot.  So, the in the spirit of keeping it real and keeping it stress-free, we're excited to share this game changer we found at our local Costco.  Please meet Kirkland Signature's Cheese Flight.  This incredible find seriously turned my Instagram-worthy cheese plate fantasies into a reality, and guess what... it only costs me $20!!  Just check out how we used this incredible Costco cheese flight to make a super simple and BETTER-FOR-YOU CHEESE BOARD.  Keep scrolling!

So, what comes in the Kirkland Signature Cheese Flight? 

This Costco cheese flight (item #1273361) comes with 5 cheeses, including: 
  1. 6.35oz Yellow Door Creamery Monteau Alpine -- a cow's milk cheese 
  2. 4.2oz Jasper Hill Farm Cabot Clothbound Mature Bandage Cheddar -- a cow's milk cheese 
  3. 7.4oz El Pastor Spanish Red Wine Soaked Goat -- a Spanish goat's milk cheese 
  4. 4.2oz Busti Il Tartufo Pecorino Toscana -- an Italian sheep's milk cheese with WHITE TRUFFLES! 
  5. 7.4oz Yellow Door Creamery Tuscan Hand-Rubbed Fontina -- a semi-soft cow's milk cheese rubbed with a blend of Italian herbs & spices 
That's nearly 30 ounces (~1.8 lbs.) of cheese for $19.99 (~$0.67 per ounce)!  Doesn't get much better than a well-curated, affordable cheese flight y'all.  The crowd favorite was the Tuscan Fontina. 

Now how do you make a healthier cheese board? 

To fully answer this question, we have to recognize that cheese...
  • Is actually the #2 source of dietary calcium for Americans (according to the National Dairy Council) 
  • Does provide high-quality protein 
  • Is also high in saturated fat (the kind that increases "lousy" LDL cholesterol and risk for heart disease) 
  • Can be a part of healthy, well-balanced diet
  • And is delicious!

There are a few cheeses that ​are lower in fat and lower in salt, but this BETTER-FOR-YOU CHEESE BOARD we're sharing takes the approach of... (1) moderation with the cheeses and (2) choosing more nutritious sides to accompany all the cheese options.  Go for a 1:1 ratio, so for every cheese there's also a nutritious side to pair it with.  Keep reading for some ideas! 

What are some nutritious sides for a BETTER-FOR-YOU CHEESE BOARD?

  1. FRUIT (Fresh & Dried)
    1. Fresh Fruit: Grapes are an obvious option, but anything seasonal will make your board extra special! For example, in the fall and winter you might include sliced apples, pears, plums or persimmons or peeled clemetines or Mandarin oranges.
    2. Dried Fruit: When fresh fruits are limited, dried fruits are an excellent alternative! Try unsweetened dried apple rings, apricots, cherries, dates, figs, persimmons, or plums. 
  2. VEGGIES (Fresh & Pickled) -- We love the following veggie side ideas for cheese boards... 
    1. ​Fresh Veggies: sliced English cucumbers, mini peppers, rainbow carrot sticks, and halved radishes 
    2. Pickled Veggies: baby pickles, pepperoncinis, roasted red peppers, and marinated artichokes 
  3. WHOLE GRAINS -- If you choose to include some type of cracker or bread for your cheese board, we suggest something whole-grain as it'll provide more fiber, vitamins, and minerals than their refined counterparts.  (You can learn more about how to choose whole-grain products here from the Whole Grains Council.) 
  4. NUTS -- Whether almonds, cashews, pistachios, walnuts, or another favorite nut, these fabulous foods can provide some much needed additional texture and flavor to your cheese board.  Further more, nuts are often good sources of protein, fiber, and heart-healthy fats! 

Now that you know how to choose better-for-you ingredients for your BETTER-FOR-YOU CHEESE BOARD, you just need to assembled the goods!  Don't stress over the perfect serving platter.  A simple cutting board or large plate can work just fine as you really want the cheeses and accompaniments to shine.

HOW-TO MEAL PLAN FOR PREDIABETES

Hi friends!

You may not know that one of my professional roles that I'm very passionate about is I'm a Lifestyle Coach for the CDC's Diabetes Prevention Program (aka DPP). 
Diabetes is personal for me as I have (1) a family history of the disease and (2) am Asian American -- both uncontrollable factors put me at a higher risk of developing the debilitating disease. 

So, in honor of November's National Diabetes Month, I wanted to give some insight into what we promote in the Diabetes Prevention Program and how you can better meal plan for Prediabetes if you have it.  (Unsure if you have Prediabetes and/or are at risk of developing Type 2 Diabetes?  Take this super short Prediabetes Risk Test here.)

What should I do if I'm Prediabetic? 

Well, don’t let the “pre” fool you.  The CDC describes Prediabetes as a "serious health condition where blood sugar levels are higher than normal, but not high enough yet to be diagnosed as Diabetes."

​Prediabetes puts you at increased risk of developing Type 2 Diabetes, heart disease, and stroke.  Think of Prediabetes as a fork in the road…
  1. Keep on the path you're currently on and your risk for Type 2 Diabetes goes up, or
  2. Make lifestyle changes to delay and (hopefully) prevent onset of Type 2 Diabetes. 

Can Prediabetes be cured?

Without lifestyle changes most people with Prediabetes will develop Type 2 Diabetes within five to six years!  But, Prediabetes is reversible with long-term lifestyle changes!  If you can lose a modest amount of weight and get more regular physical activity in your life, your risk for Type 2 Diabetes goes down.
 
(This what we do in the Diabetes Prevention Program.  We work to help you make long-lasting healthy changes to reduce your risk of developing Type 2 Diabetes.)

What does a Prediabetes meal plan look like?

In the DPP's 2012 curriculum, one strategy they recommend to achieve healthier eating habits is by monitoring and reducing day-to-day fat intake.  Why?  Mainly because fat in the most calorie-dense macronutrient (compared to protein or carbohydrates) so less fat means less calories and in theory, means less weight!

Now, this isn't all you need to know about nutrition -- eating lower fat -- but it is a solid way to simplify your approach to achieving your goal of preventing Type 2 Diabetes.  So, when meal planning for Prediabetes, keep this in mind... 
  • Research lower-fat recipes 
  • Buy lower-fat ingredients to make meals and snacks with 
  • And always be mindful of portions (quantity) of ingredients

​Here's a breakdown of the lower-fat meals mentioned in this sample Prediabetes Meal Plan: 
  • MONDAY: Baked Chicken Breasts + Oil-Free Rainbow Roasted Veggies (from Simple Vegan Blog) 
  • TUESDAY: Black Bean Burrito Bowl (from Love & Good Stuff) -- use the Avocado Salsa Verde sparingly! 
  • WEDNESDAY: Italian Pasta Skillet 
  • THURSDAY: Greek Salad Bowl (from MyRecipes)
  • FRIDAY: Crockpot Chicken Teriyaki (from The Girl on Bloor) 
  • SATURDAY: EBTB Turkey Burgers (in replace of cheese, top your turkey burgers with veggies like sliced red onion, lettuce, pickles, tomatoes, etc. which are naturally fat-free) + Side Salad
  • SUNDAY: Easy Low-Calorie Shrimp Scampi (from The Spruce Eats) + Side Salad

When you hear "Oscar Mayer," what do you think of?  Hot dogs?  Wieners?  Do you want to sing "I wish I were an Oscar Mayer wienerrrrrr... that is what I truly wish to beeeee"? 
🎶🌭​ Well, it might surprise you to know that Oscar Mayer makes everything from franks (yes!) and kielbasa to bacon and deli meats too.  So, the options are truly endless when it comes to meal planning with Oscar Mayer products.  Keep scrolling to see just how we did this and WHY.

WHY CHOOSE OSCAR MAYER? 

Did you know that 2017, Oscar Mayer actually took out artificial preservatives, added nitrates and nitrites and by-products for a better dog across their whole product line?!  You can see the claims right on their packaging!

WHAT'S THE BIG DEAL WITH NITRATES & NITRITES? 

Both nitrates and nitrites are popular preservatives for meat and often used to cure meats to prevent the bacteria that causes botulism to grow.  This curing can lead to the formation of potentially cancer-causing (carcinogenic) chemicals.  Yikes.

  • MONDAY: Our "One-Pot Chili" recipe + Oscar Mayer Lean Beef Uncured Franks for a fun take on Chili Dogs, but without the mess.  
  • TUESDAY: BALTs made with Oscar Mayer Natural Smoked Uncured Bacon
  • WEDNESDAY: Leftovers! 
  • THURSDAY: Ate out. 
  • FRIDAY: Turkey Caesar Wraps with Oscar Mayer Natural Slow Roasted Turkey Breast
  • SATURDAY: We tried this new "Chicago-Style Hot Dog Salad" from Tablespoon. 
  • SUNDAY: We threw together a Sheet Pan Sausage & Veggies meal with Oscar Mayer Natural Uncured Turkey Sausage that is definitely making it onto our Master Meals list!
