MAN-APPROVED ONE-POT CHILI RECIPE

Hiya friends! 

Are you in full blown hibernation-mode yet?  We got our first bout of absolutely frigid temps here in Nashville not too long ago so I've been craving ALL the comfort foods.  Now, there's nothing wrong with comfort foods... but when I can, I try to "healthify" them to give my body the nourishment it really needs.  Check out this ONE-POT CHILI recipe I know you're gonna have on repeat because even the menfolk LOVE it!

INGREDIENTS
  • 1 lb. lean ground beef 
  • 1 tsp chili powder
  • 1 tsp garlic powder 
  • 1 tsp dried minced onion 
  • 1 can of petite diced tomatoes
  • 1 can of fire-roasted tomatoes
  • 1 can of tomato sauce
  • 2 cans of low-sodium kidney beans
  • 1 packet of low-sodium chili seasoning 

DIRECTIONS
  1. In a large pot, brown the ground beef on medium-high heat. (As the meat begins to brown, break the meat into smaller pieces to ensure it's evenly cooked.) 
  2. Once the beef is about half-way browned, add in the chili powder, garlic powder, and onion and cook until meat is completely browned. 
  3. Then, add into the pot all the canned goods and chili seasoning. 
  4. Bring the chili to a boil and reduce to simmer for about 15 minutes. 
  5. Top with your favorite ingredients (like low-fat cheese and/or sour cream and green onions) and enjoy!
