CASHEW VEGGIE DIP & SPREAD

Happy Fall Y'all!!

The weather is finally feeling like fall in Nashville and I am super excited! I love this time of year. A few weeks ago, I shared a few ways to up your tomato game at your next tailgate. Today, I am adding another veggie-filled food to your next football game party.

Our cashew cream cheese recipe has been one of our most popular recipes. It is definitely still in my rotation of foods to make on my meal prep day. It is delicious, slightly sweet and dairy free.  If you haven't tried it yet - what are  you waiting for? ;)

Since I love the cashew cream cheese recipe so much, I wanted to create a savory version. This dip/spread is what I came up with. And it does not disappoint. The base starts out the same as the cashew cream cheese, but then you add your favorite veggies and spices. This was a win when I shared this dip with friends last weekend when we watched UT finally beat Florida! (WOO!) Everyone enjoyed it!

​Add this recipe to your meal prep day as well. Chop all the veggies and have them ready to go for this recipe and for others throughout the week.

CASHEW VEGGIE DIP & SPREAD

INGREDIENTS:
  • 1 cup cashews, soaked overnight
  • 1/2 cup* unsweetened almond milk
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 clove garlic, minced
  • 3 tablespoons lemon juice
  • 1/4 cup green onions, chopped
  • 1/4 cup bell pepper (red, yellow & green)*, chopped 
  • 1/4 cup carrots, chopped
  • 1/4 cup celery, chopped
*add more milk if you like a thinner consistency. 
* I used all three bell peppers. (I like the color contrast). You can use only one or all three. 

DIRECTIONS:
  1. Soak cashews overnight. (This softens the cashews and creates the creamiest texture when blended.)
  2. Drain and rinse cashews.
  3. Add cashews, almond milk, salt, pepper, garlic and lemon juice to blender. Blend until creamy.
  4. Transfer cashew mixture to a medium bowl. Mix in chopped green onions, bell pepper, carrots, and celery.

Ways to enjoy the cashew veggie dip & spread:
  • Slathered on toast
  • Served as a dip with raw veggies and chips (great for tailgate spread)
  • Tuna or chicken salad - instead of adding the traditional mayo, use this veggie rich dip instead for a yummy twist on a classic. Bonus: it's even faster because it already has all the spices and veg added.
