5 VERY DELICIOUS VEGGIE-FILLED SANDWICHES

Happy August, everyone! 

It's crazy how fast the summer has flown by.  Now it's time to gear up for the fall before the holidays hit haha. (No but really.)

​Today, I'm rounding up 5 amazing and delicious veggie-packed sandwiches that I love in honor of #SandwichMonth :)  Because who doesn't love a good sandwich!?

Now you might have some seconds thoughts when it comes to sandwiches being "healthy", but here are 4 no-fail ways to keep your favorite sammie slim yet satisfying:
  1. GO ​FOR THE GRAIN.  If there's a whole grain option, do it!  The extra fiber will keep you feeling fuller for longer. (An average slice of white bread has <1g of fiber, as compared to 3g in this Dave Killer’s Bread 100% Whole Wheat variety.) And bonus points if you can find thin slices OR order your sandwich “skinny” -- where they scoop out the inside bread fluff to make more room for the yummy stuff!
  2. BE CAUTIOUS WITH CONDIMENTS. It’s easy to overload your sammie with all the high-fat spread and toppings -- bacon, mayo, cheese, avocado, aioli… I’m looking at you!  Choose 1 or 2 of your favorites and save the others for another time.
  3. PICK LEAN PROTEIN.  Have fun trying deli ham, turkey, chicken or beef in your sandwich.  They are loaded with protein and usually have less fat.
  4. VEG OUT.  You don’t have to pick a lot of veggies to add crunch and color to you sammie.  Just pick one and load it up!

  1. Grilled Vegetable Sandwich with Herbed Ricotta -- Don’t forget to go for a crusty multi-grain bread!
  2. Stuffed Breakfast Sandwiches -- Who says you can only have breakfast foods for breakfast!?
  3. Buffalo Cauliflower Sandwich -- Think better-for-you buffalo sammie :) 
  4. Ultimate Veggie Sandwich -- So packed with veggies you won't even miss the protein. 
  5. Chickpea Shawarma Sandwich -- Try it in a whole wheat pita!

I'm going to try the Stuffed Breakfast Sandwich and include it without the eggs on my next picnic or tailgate.
