DARK CHOCOLATE + PINEAPPLE PARTY BITES

Hey Planners!

Can you believe August is coming to an end!?  Where did the summer go?

Ugh.  Well in an effort to preserve the summertime vibes for as long as possible, I am super excited to share a fun, simple recipe with you today that's perfect, perfect, perfect for any get together or gathering.  Lemme get straight to it!

At the office, my co-workers love to celebrate all occasions with potlucks that fill tables and tables to the rim with delicious and decadent goodies.  And while my tastebuds are having a field day, I can't help but take pause at my possible next steps... "How am I going to fit this into my day?"... "Am I going to feel bad after eating this?"... "Am I reaaally hungry?"...

But that quickly went out the window (so much for mindful eating) when I spotted the most adorable chocolate-covered treat!  And to my delight I learned that it was a chocolate-covered pineapple!  AHH!  Uhh, guilt-free?  Check! 

And guys, it was as heavenly as expected so now I'm officially obsessed and making my homemade version for any & all things :)  Here's how...

Dark Chocolate + Pineapple Party Bites


​INGREDIENTS
  • 1 small pineapple, cut into chunks 
  • 8 ounces of dark chocolate, melted 
  • coconut oil (optional) 
  • sprinkles
DIRECTIONS: 
  1. Spread the pineapple chunks onto a layer of paper towels to rid some of the moisture. 
  2. ​Melt chocolate in a double boiler (you can also do this in the microwave) ​until it is smooth and shiny.  (NOTE: If chocolate is too thick, add 1 Tbsp of coconut oil at a time to improve texture.) 
  3. Dip the pineapple chunks into chocolate using a toothpick and rotate to cover completely.  
  4. Place the chocolate-covered pineapple onto parchment paper or an aluminum foil-covered baking sheet to set. 
  5. Once all pineapple chunks are covered, top with your favorite sprinkles! 
  6. Place the pineapple chunks in the fridge until the chocolate has hardened.

These dark chocolate + pineapple party bites are actually so easy and fun to make even the kids can help!  And bonus points... it's really inexpensive and full of nutrition.  We have a win-win-win here folks :)
