Here at The Meal Planning Method, we believe that all foods fit into a healthy lifestyle. With this, it is so fun to experiment and explore all types of cuisines, flavors, and techniques. This recipe exemplifies that. Cashews have become a staple in vegan cooking because you can do SO much with them that emulates dairy. This cashew cream cheese is delicious and should be a staple in everyone’s kitchen - vegan or not.

Cashew cream cheese is not only delicious and creamy, it is so dreamy because it also has nutritional benefits - thanks to the cashews. Cashews are a great source of monounsaturated fats, which are heart healthy. Cashews also provide vitamins and minerals such as magnesium, copper, phosphorus, manganese and zinc. Cashews (and all nuts) are also a source of plant-based protein. 

CASHEW CREAM CHEESE

INGREDIENTS
  • 2 cups unsalted cashews, soaked
  • 3/4 cup Almond Milk 
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 1 1/4 tsp Maple syrup
DIRECTIONS
  1. Soak cashews overnight. (This softens the cashews and creates the creamiest texture when blended.)
  2. Drain and rinse cashews.
  3. Add cashews, almond milk, vanilla, cinnamon, and maple syrup to blender. Blend until creamy.
  4. Slather on toast, top with your favorite fruit and enjoy!
