BLUEBERRY + SPINACH SMOOTHIE BOWL

Hi y'all!

I wanted to share one of my favorite ways to add fruits and veggies to my day. The smoothie bowl. Smoothie bowls have been on repeat for me this summer. They are super easy, amazingly delicious, nutrient dense and refreshing during these summer months.

What's a smoothie bowl? 
Basically, a smoothie bowl is a thickened smoothie and eaten with a spoon. There are days that a hand-held smoothie is just what I need when I am on the go. But, other days, sitting down with a big ole thick smoothie bowl just hits the spot. These are a great way to pack in your fruits and vegetables. I love adding greens such as spinach, kale and herbs to smoothies and smoothie bowls to up my veggie intake. Plus, with the addition of the yummy and sweet fruits, you barely taste the veggies. So, definitely add them in. Go on. Add another handful. 😉

Toppings are a must for smoothie bowls. Toppings add additional flavors and textures with your toppings. For this recipe, I chose chia seeds, hemp seeds and unsweetened shredded coconut.
  • Chia seeds add a boost of fiber, omega 3's and protein. Want another recipe using these magical seeds? Check this one out. 
  • Hemp seeds add protein, fiber and healthy fats.  

Add your favorite nut, seed, fresh fruit or all of these to top your smoothie bowls.

​This is a also great recipe to use year-round since it uses frozen fruits. You can definitely use fresh banana and/or blueberries here, but using frozen creates a thick and creamy smoothie bowl without using an ice.

BLUEBERRY + SPINACH SMOOTHIE BOWL

INGREDIENTS
  • 1 cup ​Frozen blueberries
  • 1/2 Frozen Banana
  • 1 handful (about 2 cups) Fresh Spinach
  • 1/2 cup - 1 cup Liquid of choice: Almond milk, coconut milk, cow's milk, water, etc. 
  • Toppings: Chia seeds, hemp seeds, shredded unsweetened coconut
DIRECTIONS
  1. ​In a high speed blender, add milk, then frozen ingredients. Lastly, add in fresh ingredients. Blend until smooth.
  2. Top with your favorite toppings
  3. Enjoy!

​NOTE: D
epending on how thick you like your smoothies, add more or less milk.
