3-INGREDIENT CHOCOLATE BANANA BITES

Hey y'all!

There's something you should know about me: I have a GINORMOUS sweet tooth. For those of you that already know me, this is not a surprise at all. However, as a registered dietitian nutritionist, it is usually assumed that I eat only "health foods." I do love those “type” of foods, but I am a lover of all foods.  Here at The Meal Planning Method,  all foods fit. And that definitely includes chocolate.

These dark chocolate frozen banana bites are the perfect treat because they satisfy my sweet tooth plus have nutritional benefits of potassium, fiber, antioxidants, Vitamins B6 and C and more! 

You could buy similar frozen treats in the grocery store. But, with only three ingredients, this recipe is super simple and you know exactly what you are eating, Plus, you can make a lot of these bites for a small price tag. 

I used coconut oil because it creates an instant magic shell. You can also use butter, or omit it all together, but it won't create the same affect.

DARK CHOCOLATE FROZEN BANANA BITES

INGREDIENTS:
  • 1 cup dark chocolate chips
  • 1-2 tbsp Coconut Oil (organic, cold-pressed)
  • 2 ripe Bananas
DIRECTIONS
  1. Slice bananas into coins and freeze. Use this technique.
  2. Melt chocolate in a double boiler (can also do this in the microwave)​until it is melted, smooth and shiny. 
  3. Dip frozen banana slices into chocolate and place onto parchment paper to set.
  4. Place back into freezer to completely firm up and store into plastic bags.
  5. Enjoy!

NOTES & TIPS:
Don't have a double boiler? No worries! You can create one at home using things that you most likely already have in your kitchen:
​A heat-safe glass bowl, a medium sized sauce pot, water & your stovetop!

How to fix seizing (or chunky, clumping) chocolate: Add more coconut oil and stir over low heat. This is bring back your smooth, shiny  chocolate back!
